Turkey Noodle Soup

Ingredients:

  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 4 garlic cloves
  • 1 cup celery
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 12 cups chicken broth
  • 4 cups uncooked egg noodles
  • 1 tablespoon low-sodium soy sauce
  • 1 bay leaf
  • 4 cups cooked turkey
  • 1 tablespoon oil

Instructions:

  1. In a large saucepan, add your oil and saute the carrots, onion, garlic, and celery until lightly browned.  Add salt and pepper and continue to saute for another 3 minutes.
  2. Add chicken broth and bring to a boil.  Add egg noodles and reduce heat.  Cook until noodles are done.
  3. Add turkey and let simmer until the turkey is warm.
  4. Your soup is ready to serve!
