Ingredients:
- 2 cups carrots, sliced
- 1 cup onions, chopped
- 4 garlic cloves
- 1 cup celery
- ½ teaspoon salt
- ½ teaspoon pepper
- 12 cups chicken broth
- 4 cups uncooked egg noodles
- 1 tablespoon low-sodium soy sauce
- 1 bay leaf
- 4 cups cooked turkey
- 1 tablespoon oil
Instructions:
- In a large saucepan, add your oil and saute the carrots, onion, garlic, and celery until lightly browned. Add salt and pepper and continue to saute for another 3 minutes.
- Add chicken broth and bring to a boil. Add egg noodles and reduce heat. Cook until noodles are done.
- Add turkey and let simmer until the turkey is warm.
- Your soup is ready to serve!
