Chocolate Chip Pumpkin Bread

Time: 1 hour – Yield: 2 loaves

Prep Time: 15 minutes 

Cook Time: 40 minutes-1 hour                                                                                

Yield: 2 – 8×4 in. loaves

 

Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 large eggs, room temperature
  • 2 cups sugar
  • 2 cups canned pumpkin
  • 1 ½ cups canola oil
  • 1 ½ cups milk chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, combine the flour, cinnamon, salt and baking soda.
  3. In a separate bowl, beat the eggs, pumpkin and oil.  Stir into dry ingredients just until combined.
  4. Fold in chocolate chips.
  5. Pour into greased mini pans, or 2, 8×4 in. loaf pans
  6. Bake at 350 degrees F for 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks.
