It’s a big holiday here at camp! Today is #Natio It’s a big holiday here at camp! Today is #NationalChocolateChipDay! 🍪 We’re celebrating by making a batch of some of our favorite cookies! 

VeryVera Hershey's Chocolate Chip Cookies 

INGREDIENTS
1 1/4 c all-purpose flour
1/2 c light brown sugar, packed
1/2 c butter, softened
1/4 c sugar
1 egg
1 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. salt
1 6-oz package semisweet chocolate chips (our favorite are @hersheys) 

INSTRUCTIONS

1️⃣ Preheat oven to 375. Grease cookie sheets. Into large bowl, measure all ingredients except chocolate pieces.
2️⃣ With mixer at medium speed, beat until well mixed, scraping bowl.
3️⃣ Add the chocolate chips. Stir in well.
4️⃣ Drop by rounded teaspoonfuls, 2 inches apart, on sheets. Bake 10-12 minutes until cookies are lightly browned.
5️⃣ With spatula, remove cookies to wire racks; cool. Enjoy! 🍪

Spring has sprung! 🌸 While many of you will be Spring has sprung! 🌸 While many of you will be joining us in a few short weeks for summer camp, we’ve got some recipes up our sleeves to keep you busy until then! Add a burst of sunshine to your day with these delightful Spring Lemon Cupcakes! 🍋

RECIPE: 

Floured baking spray
1 1/3 c unsalted butter, at room temperature
2 2/3 c granulated sugar
5 extra-large eggs, at room temperature
4 c cake flour
4 tsp. baking powder
3/4 tsp. salt
2 c whole milk, at room temperature
1/2 tsp. pure vanilla extract
1 1/3 tsp. lemon extract
Zest of 1 lemon

INSTRUCTIONS

1️⃣ Preheat the oven to 400F. Grease and flour three 9-inch pans lined with parchment paper.

2️⃣ Cream the butter and sugar in the bowl of a stand mixer on medium speed for 5 minutes, or until light and fluffy. Scrape the sides and bottom of the bowl.

4️⃣ Add the eggs one at a time, beating well after each addition. Scrape the sides and bottom of the bowl again.

5️⃣ Combine the cake flour, baking powder, and salt in a bowl and mix with a wire whisk.
Combine the milk, vanilla extract, and lemon extract in a liquid measuring cup.

6️⃣ With the mixer on low, alternately add the flour mixture and the milk mixture, beginning with the flour mixture and ending with the milk mixture, beating until well blended.

7️⃣ Beat the batter for 7 minutes on low speed.

8️⃣ Add the lemon zest and beat until incorporated.

9️⃣ Divide the batter evenly between the three prepared pans. Tap the pans on the counter to ensure there are no air bubbles. Bake for 18 to 20 minutes. Test doneness by touching the top. If it springs back, it is done. If the indentation stays, it needs 2 to 3 minutes longer.

🔟 Cool the cakes for at least 10 minutes on a cooling rack before removing from pans.
